Salsa Verde is Inspirational Food
Food is another inspiration for me, especially Italian Food which comes from the best of nature that is in season. Here is a splendid sauce that Italians use on everything–well just about everything. We had it on baked potatoes the other night–Wow. You can use it tossed on pasta, on sandwiches, to spice up soups, or on grilled bread.
On warning. You cannot be afraid of Olive Oil! It is good for you after all.
Here is the recipe, it’s from David Rocco’s Dolce Vita
one of the best cookbooks I’ve read in years!
1 large bunch of flat leaf parsley
3to 4 Basil leaves
3-4 gloves of garlic
4 anchovies
4 tablespoons of capers drained
1 1/2 cups of olive oil extra virgin(I warned you, but you only use it dribbled on, right!)
Chop the parsley, basil, garlic, until you have a rough chop.
Then add in the anchovies and the capers, and chop until everything is evenly minced.
Pour the olive oil (Oh Extra Virgin please!) into a glass jar, and the chopped ingredients and mix vigorously.
Let it sit for awhile to allow flavors to meld.
Use liberally on–well just about anything!
