We are so use to the school of striving that we fail to see the abundance around us.When I stop, really stop, and look around me I begin to understand the quote.
We are trained to go for the gusto, get it all now, to obtain the latest and best gadgets money can buy. In our headlong pursuit we seldom stop to see that we have everything we need.
In this season, spend a little less money and spend more time with family and friends.
The season is for relaxing in front of a fire roasting chestnuts.

Now for something completely different
If you know me you understand that I love food, especially the foods of the Mediterranean mainly because I love simple food using fresh ingredients.
I made this little treat for lunch and thought I would pass along this incredibly delicious recipe.
First off all you need ripe tomatoes, not always Silagra the easiest thing to find. I buy the hot house vine ripened and let them ripen further in a little wicker basket I keep on my counter. I hope you understand that it is a sin of the highest order to refrigerate tomatoes. Just buy what you can use in two or three days.
You need some nice olive oil and a small shallot. You might get away with a regular onion but the taste might be a little harsh. You also need a wee bit of balsamic Vinegar, perhaps 1 teaspoon. This treat is served on toasted bread. A good crusty Italian type, but a couple of slices of whole wheat will do.

To put in all together

In a Skillet, heat some olive oil, about 3 tablespoons, perhaps a little more.
Dice up the shallot (tiny dice) then quarter three or four tomatoes. I did four fairly small ones.
Throw the shallots in the hot oil and swirl, then toss in the tomatoes. Let them cook for about five minutes at medium heat until the shallots brown lightly. Add a couple of grindings of sea salt. Then add your teaspoon of vinegar and swirl in the pan so the ingredients mix.
Meanwhile toast two pieces of bread and grate a little bit of cheese maybe two or three tablespoons, you want a fine grating.
When the toast pops up, put on a plate, divide the tomatoes(oil and all) between the two slices sprinkle the cheese over top, add a little tiny grind of sea salt and drizzle with a little more olive oil. Share with a friend or eat it all yourself. This is divine.
